Job Description:

Madison College’s Food Services is seeking a Food Services Associate – Catering to join the team. In this role you will work closely with the Executive Chef, Sous Chef, and Assistant Sous Chef to implement services, initiatives, projects, strategic plans and events for Madison College Food Services. Reporting to the Executive Chef and Lead Catering Chef, this role involves contributing menu ideas and service strategies to enhance operational efficiency.

The Food Services Associate – Catering is responsible for managing resources, making informed decisions, building customer relationships, and providing operational data to department leadership. This position does not have any direct reports.

This full-time, 52-weeks per year position, general working hours Monday – Friday between 6:30am -5:00pm, occasional evenings and weekend for scheduled events.

Essential Responsibilities:

  • Performs general and technical routine for cold/hot food preparation/production duties for all venues.
  • Ability to perform duties for all venues in food Services:
    • Hot Prep
    • Cold prep
    • Taqueria
    • Street Food/ Pizza station
    • Grill/entrée stations (breakfast and lunch)
    • Sandwich station
    • Bakery
    • Salad bar
    • Grab n Go
    • Catering
    • Dish room/dishwashing
  • Adjust daily work schedule to meet needs of operation due to scheduled and unscheduled absences.
  • Food and supply cost control. The position will utilize knowledge of labeling, dating, rotating, recipe conversion, time/temperature controls, time management, product/inventory management, portion control, and waste management. Use of checklists to assist with short- and long-term financial goals of department. Will assist daily with receiving, rotating, and restocking of all food and supplies from vendors. Use communication skills and processes to inform leadership of needed products and possible shortages.
  • Ensure public and multi-functional workstations are clean and sanitized in adherence to Dane County Public Health Department regulations, performs general and technical duties to include but not limited to the following:
    • Filling Time Temperature Control, cooler and freezer temperature logs
    • Cleaning and sanitizing walk ins, floors, food surfaces, walls, ceilings, floor drains and shelving
    • Dish room operations for cleaning all dishes, pots, pans, small wares, internal/ external of machine, stainless walls, and tray return
    • HAACP Plans
    • Wisconsin Serve Safe training
    • Adherence to Covid 19 policies
    • Basic first aid skills
    • Uniform/ personal hygiene
    • Equipment is functioning properly
    • Alerting kitchen leadership about equipment or facility concerns so repairs or direction can be provided
  • Develop junior FT, PT, and student staff per kitchen leadership assignment. Proficient knowledge of opening, closing, and operating processes and procedures. Communication to junior staff of Food Services standards of food quality, customer service and time management. Provide continual training or retraining of junior staff as required.
  • Communication to departmental leadership of information essential to providing quality services. Notification of customer or staff concerns, Front of House Leadership requests, product shortages, equipment failure, accidents, custodial requests, and catering concerns.
  • Engage in self-directed personal and professional development related to food services industry trends that are relevant to Madison College's Food Services. Attend college workshops to ensure continued development of professional skills. Demonstrate a commitment to diversity, equity, and inclusion in alignment with Madison College's Mission and Foundational Principles. Develop and engage in initiatives for Food Security, Sustainability and Menu development. Proactivity for problem solving for department.
  • Maintain positive customer experience. Continually maintain high standards of service levels for positive service experiences. Assist in developing and implementing procedures for opening, operational and closing duties that improve services. Continually develop junior staff with processes to resolve customer issues for acceptable outcomes. Provide conflict resolution strategies for junior staff. Participate in continuous improvement for all services and strategic goals of department.

Knowledge, Skills & Abilities:

  • Skill in communicating effectively and professionally, both orally and in writing.
  • Demonstrated skill in communications and human relations with populations of diverse socioeconomic and cultural backgrounds and persons with disabilities.
  • Knowledge of basic food service and preparation techniques, recipe conversion, knife skills, kitchen function, safety and sanitation practices.
  • Knowledge of basic math to execute volume cooking.
  • Knowledge of mechanical kitchen equipment such as slicers, dishwashers, ovens, fryers, and grills.
  • Time management and organizational skills
  • Ability to lift 25lbs.

Minimum Requirements:

  • High School/GED or equivalent working experience. *Experience used as an equivalent of an educational requirement is in addition to any experience required by the position.
  • Six (6) months of food service experience and catering.
